I got this recipe from Nancy, at a communal table. I have used several of her recipes. I have incorporated many of her recipes into my repertoire. I have used her flatbread weekly. In fact I make up a batch, separate them with wax paper, and tuck them in my freezer. However, that is not what I want to talk about today. I want to talk about this “4 minute beauty”. Doesn’t that just sound like music to your ears. Just imagine planning a party. Here is your dessert. If you make it the day before the flavor and nuts develop. This is a go-to recipe. I can’t sing the praises enough for this dessert, and didn’t I mention somewhere I am a lemon girl?
Really she said four minutes. If you make this pie the day before or early morning and then roast some chicken you can have the easiest party you ever held.
- 2 eggs
- 1 cup sugar
- ½ cup butter, softened
- ½ cup flour
- ¼ cup dutch process cocoa
- ¼ tsp. salt
- 1 tsp. vanilla
- 1 Tbsp. Kahlua (optional)
- ½ cup chopped and toasted walnuts, pecans or macadamia nuts (optional)
- Mise en place ~ Gather Ingredients ~ Bring all to room temperature
- Preheat the oven to 350 degrees. Grease a 9 inch springform pan or 9 inch pie plate and set aside.
- Combine eggs through Kahlua (if using) in the bowl of a mixer. Mix for 4 minutes until batter is thoroughly combined; yes, you need to mix for a full 4 minutes!
- Stir in nuts if using.
- Pour batter into prepared pan and bake for 20 - 30 minutes until pie is set on top and doesn't jiggle when you move it - pie should look dry on top!
- Remove from the oven and let cool. As the pie cools it will fall - not to worry it is supposed to happen!
- Slice and serve!
